Looks like her father died right before the census. Below is the civil death index record. He died in 1899 and the death was registered in the first quarter of 1900. You can get a copy of theis record by contacting the GRO www.groireland.ie  fill out their form and provide the quarter/year of registration, registration district and the volume and page number ( 4 and 73). A copy costs around 4 euros.

1749 Elphin Census FM Priest (RC) Cottier @ “Mount Thady”  (possibly the townland of Lodge)

1857 Thomas Priest @ Ardmore farm #9a [GV1857]  in the parish of Killukin (Boyle)  No Priest listed here in 1835 [TA] so he may have blown in from the adjascent parish of Estersnow.

1867 John Higgins & Mary McDermott of Knockroe (James Priest acted as godparent)
