I searched on the subscription site Roots Ireland and did not find a baptismal record for a Catherine Matthews with father John and mother with maiden name Farrell. You did not mention the religious denomination of the family. If they were RC there are about five RC parishes with records starting later than 1840. There are Church of Ireland parishes included in Roots Ireland although some parishes start later than 1840.

The only other possible source is the Griffiths Valuation head of household listing for Co. Longford. The survey was taken around 1853. We don't know if your John Matthews was alive and leasing land in 1853 to be included on the Griffiths listing. There were three John Matthews records as follows: Clooneen townland Columkille civil parish, Toome townland Columbkille civil parish and Creeve townland Killoe civil parish. The RC records for Killoe and Columbkille parishes go back before 1840.

One other possible lead. I did find the baptismal record below for 1821 but the parents match the names you provided.
