was my grandmother able to come to America, passage paid by Nuns so she could join the order in TEXAS? Anyone familiar with this type of story?

I do know of two other girls from Couny Wexford who travelled to Texas in 1909 on board a ship called the 'Irak'. They joined an order called the Incarnate Word in San Antonia, Texas. Does this tie in with your grandmother's time line?
